The way a trailer ramp door is hinged is going to depend on how the manufacturer decides it needs to be hung so it really could be one long piece or several pieces. The hinge(s) may or may not extend all the way to the edges but most of the ones I have seen do extend the length of the door.

What you're planning sounds like it would work, but you'll need to be sure you have some cross members in the door where each hinge mounts. Since the doors are large and are likely pretty heavy, I'd use the biggest hinges you can.
If you were wanting the hinge to swing all the way up against the side of the trailer, I'd recommend using # 2212. A hook and keeper, part # 383400 would hold the door open for you as you load/unload.

According to the folks at TRC, the # 362100-955 hinge you'd looked at is intended for a downward opening ramp-type door that would have the load resting vertically on the spring. For an upward opening door, there would be nothing holding the door in place which would be dangerous because the door would become unhinged.

It really depends on how heavy the door is, how far it sticks out from the hinges, and how big the hinges are. You could technically say the same thing about any door that mounts on hinges. So the doors in your house you would not necessarily be closed all the time.

The Strap Hinge part # PLR104SS is a universal trailer door hinge. The best way to determine replacement is based on length which for this model is 5-1/2" long. The hinges can be riveted or screwed on. If your old one has rivets they will need to be drilled out to remove them. The new one then can be attached with screws for an easier install or a rivet gun if you have one.

Sounds like you are looking for a controlled motion hinge like the Replacement Controlled Motion Hinge part # LC22NJ which has a lot of friction in the hinge assembly that allows it to stop where you let go of the door. The front cover of the Bright Way Push-to-Test Trailer Breakaway Kit # 3802346 is supposed to swing out like you mentioned. I attached pictures that show the door open. I'd be willing to bet the hinge on the left side of the door isn't fully seated which is causing the issue. Check to see if you can pop the hinge back onto the posts of the section of the hinge that is attached to the housing.
